peanut butter, nutella and banana sandwich cookies

You’d think I’d get all my baking ya-ya’s out at work. But surprisingly, I came home today feeling a sudden urge to bake some more. As a mum, I like baking for my kids. No apologies there. I don’t expect that other parents do, or should, or anything of the sort. I simply find it enjoyable. And for the kids, well, they’ve never complained about the “hardship” of taste-testing anything.

I arrived late to the Nutella love fest, having tried it for the first time only last year. I’ve been bitten, and now that I’ve managed to squeeze it into a number of baked goods, I’ve decided to make my own. I’ll report back when I go into full on choco-hazelnut spread production! Recently, Kieran asked for peanut butter cookies. So today’s offering sandwiches Nutella and bananas between peanut butter cookies. A sort of breakfast …. meets dessert … meets decadence. Oh, and guess what? A recipe follows.

Peanut Butter, Nutella and Banana Sandwich Cookies

Yields 20, 3″ cookies (or 10 sandwich cookies). Bake at 375 f for 10 minutes

1 cup unsalted butter
1 cup raw, un-sweetened peanut butter
1 cup packed brown sugar
2 eggs
2 1/2 cups unbleached, all-purpose flour
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt

(optional: 2-3 Tbsp crushed peanuts for topping )

In the bowl of an electric mixer, beat together butter, sugar and peanut butter until well combined. In a mixing bowl, whisk together flour, baking powder, baking soda and salt. Add flour mixture to the butter mixture, beating on low speed until combined. Roll the dough into approximately 2″ balls and place them 2″ apart on a baking sheet lined with parchment paper (or a baking mat).  Flatten the dough slightly with a fork, using a criss-cross pattern.  Dip fork in flour when it becomes sticky. If using crushed peanuts, sprinkle on top. Bake cookies for 10 minutes at 375 f. Transfer to a baking rack to cool.

These cookies are wonderful as is. But for an extra kick, spread a layer of Nutella on two cookies. Add four thinly sliced banana rounds on one of them, then top with the other cookie. Enjoy!
