keep calm and make food

What do you do when you knock on your teenager’s door on a Sunday morning and—surprise!—not one, but three people smile bashfully back at you? Well … you keep calm and make food. And a very large pot of coffee. I had cheese biscuits on the go for Number Four’s bacon and egg breakfast sandwich, so adding a few more for his sister and her friends was an easy stretch. I had a hankering for muffins, so I whipped up a gluten-free batch with raspberries, lemon and coconut. Not just for me, you understand (sure, sure) but because it’s never a bad idea to have muffins lurking in the house …
